Green Goddess Quinoa Bowl

INGREDIENTS

Dressing

Green Goddess Quina Bowl healthy vegan salad
  • 1 avocado 

  • 150g Greek Yogurt or coconut yogurt 

  • 1 tbs lemon juice

  • 1 tbs honey 

  • 1 tbs extra virgin olive oil

  • 1 tsp ground cumin

  • Sprinkle of Salt & Pepper 

Salad 

  • 200g quinoa 

  • 200g broccoli 

  • 100g snow peas

  • 400g chick peas

  • 1 big handful of baby spinach 

  • 1 tbs cranberries 

  • 2 tbs pistachios 

  • 1 tbs sunflower seeds

  • 1 tbs pumpkin seeds 

  • Shallots/spring onions to garnish 

 

METHOD

-Rinse quinoa under cold running water until water runs clear. Place in pan with double the amount of water & a pinch of salt. Bring to the boil & then simmer for 10-15 minutes or until the water has been absorbed and the quinoa sprouts little tails. Remove from heat & set aside. 

-Blend all salad dressing ingredients in a food processor & set aside. 

-Cut broccoli into florets & cut stems off snow peas. Boil a pot of water & place broccoli & snow peas in a steaming pot above water. Steam until slightly soft (approx. 5 mins). 

-Rinse chick peas in cold running water until water runs clear. 

-In a large bowl toss together cooked quinoa, broccoli, snow peas, baby spinach, pistachios, cranberries and chick peas. Stir through dressing & top with pumpkin seeds, sunflower seeds & shallots.
