This one packs a punch of goodness to fuel you through your day...

This makes about 6 servings so if you don't want to be eating it for lunch and dinner for the next few days, reduce the amounts accordingly. 

INGREDIENTS: 

-150g quinoa, rinsed in water 

-300mls water

-Pinch of salt 

-1 red capsicum, chopped 

-1/2 red onion, chopped 

-1 cucumber, chopped 

-150g goats cheese 

-300g cherry tomatoes, cut in half

-1 avocado, cut into small cubes 

-100g kale, ripped into small pieces 

-4 tbs sunflower seeds 

-5 tbs cranberries 

-500g Salmon (smoked, canned or freshly baked/pan fried) 

DRESSING: 

-6 sprigs flat leaf parsley

-4 sprigs basil 

-1 tsp lemon zest 

-1 tsp minced garlic 

-30g extra virgin olive oil 

-2 tsp Dijon mustard

-2 tsp apple cider vinegar

-Pinch of salt

-Pinch of black pepper 

METHOD: 

1. Place quinoa, water and a pinch of salt in a pot and bring to a boil. Once boiling point is reached, simmer for 10-15 minutes or until quinoa is tender and liquid has been absorbed. Set aside to cool. 

2. In a small bowl mix together all dressing ingredients. 

3. In a large bowl combine all remaining salad ingredients excluding cranberries and sunflower seeds. 

4. Add the quinoa and dressing to the salad in the large bowl and top with cranberries and sunflower seeds. Serve & enjoy!
