Easy, healthy, vegetarian dinner

This one is delicious and easy...my two favourite words when it comes to cooking.

INGREDIENTS

easy healthy vegetarian and vegan lunch or dinner
  • 4 tbs Macadamia oil  

  • 2 beetroots, peeled and chopped into cubes

  • 1 cup pumpkin, chopped into cubes

  • 6 asparagus stalks, chopped into 3

  • 1 small floret of broccoli, chopped into bite sized pieces

  • 12 brussel sprouts 

  • Dried basil 

  • Dried oregano 

  • 1 cup baby spinach 

  • 1 cup rocket 

  • 1/2 an avocado

  • 1/2 a lime

  • 2 heaped tbs of hummus 

  • Chili flakes 

METHOD

  1. Pre-heat oven to 180 degrees. Line 2 baking trays with foil or baking paper. Place beetroot and pumpkin in one tray and asparagus, broccoli and brussel sprouts in the other. Drizzle all veggies with macadamia oil and sprinkle with basil and oregano. Place the beetroot and pumpkin tray in the oven for 10 minutes before adding the tray of greens to the oven. Bake for a further 20 minutes or until cooked to liking. 

  2. Create a bed of the baby spinach and rocket in the bottom of the bowl. Top with half the veggies. Place 1 tbs of hummus and 1/4 of an avocado on top. Drizzle with 1 tbs of macadamia oil or olive oil and sprinkle with chili flakes. 

Serves 2.
